ROASTED VEGGIE QUINOA BOWL

When not dining out at various restaurants in Austin, I keep my meals simple and clean at home. Mostly vegetarian, but definitely quick and easy with fast clean-up.

Inspired by the Tofu, Quinoa & Roasted Vegetable Bowl that I had while watching a late night movie at Alamo Drafthouse (along with their unlimited popcorn bowl, with extra butter), this healthy roasted veggie quinoa bowl has been my weekday go-to!

 

Healthy Roasted Veggie Bowl Ingredients

Going along with “quick and easy with fast clean-up”, I’m a big fan of Trader Joe’s prepackaged greens and frozen veggies! How else am I going to get fire roasted bell peppers and roasted corn?? But of course, feel free to use fresh veggies in your bowl.

It doesn’t get any easier with roasting all veggies on one pan. Fast clean up!

Leafy greens with crispy kale, protein packed quinoa, creamy avocado, roasted cauliflower, peppers, onions, and sweet corn. Squeeze of lime, and topped with sriracha almonds for crunch and a spicy kick!
