Fig & Blueberry Chia Pudding

Ready to make your easiest breakfast yet? This is a no-hassle, powerhouse meal made with chia seeds that’ll get you out the door fast to rock your early workout, crush that morning meeting, and get you started on your to-do list.

Rich in fiber, omega-3s, and antioxidants, chia seeds are incredibly healthy. Hailed as a “superfood”, this ancient Aztec staple helps maintain stable blood sugar levels, lower cholesterol, and healthy weight.

The blueberries, which are packed with antioxidants, and figs, a great source of fiber and are full of vitamins and minerals, give a burst of sweetness to the chia pudding. Hello glowing skin!

Ingredients

  • 2 cups cashew milk
  • ½ cup chia seeds
  • ½ tsp vanilla extract
  • 2 tbsp honey or maple syrup
  • ½ cup blueberries, washed and dried
  • 4 small fresh figs, sliced

Instructions

  1. Mix together cashew milk, chia seeds, vanilla extract, and honey in a bowl. Cover and refrigerate overnight.
  2. Top with blueberries and sliced figs in the morning.
  3. Enjoy!
