Slow Cooker Mozzarella Stuffed Meatballs

I’ve never been a fan of cold appetizers at holiday parties, especially appetizers that are meant to be served hot. So how do you keep appetizers warm throughout a party? The slow cooker! I love these Slow Cooker Mozzarella Stuffed Meatballs because you can make them days in advance and with minimal effort. All the magic happens in the slow cooker! Super juicy, tender meatballs smothered with marinara sauce and stuffed with mozzarella with grated parmesan.

Slow Cooker Mozzarella Stuffed Meatballs

Super juicy, tender meatballs smothered with marinara sauce and stuffed with mozzarella with grated parmesan.

  • Prep Time: 1 hour
  • Cook Time: 4 hours
  • Total Time: 5 hours
  • Yield: 24 meatballs

Ingredients

For the meatballs:

  • 1/3 cup Italian breadcrumbs
  • 1/3 cup buttermilk, plus more as needed
  • ½ large onion, minced
  • 6 cloves garlic, finely minced
  • 3 ounces grated Parmigiano-Reggiano, grated, plus more for serving
  • ½ cup loosely packed fresh parsley leaves, minced
  • 4 teaspoons salt
  • Freshly ground black pepper
  • 2 large eggs
  • 1 tsp dried oregano
  • 1 lb H-E-B 73% lean ground beef
  • 1 ½ lb H-E-B ground pork
  • Galbani mozzarella fresca pearls
  • ¼ cup extra-virgin olive oil
  • red pepper flakes
  • 1 sprig fresh basil

For the sauce:

  • 1 jar H-E-B organics marinara pasta sauce (25 oz)
  • ½ large onion, minced
  • 6 cloves garlic, finely minced
  • 1 tsp dried oregano

Instructions

For the meatballs:

  1. In your stand mixer bowl, combine breadcrumbs with buttermilk. Add minced onions, minced garlic, Parmigiano-Reggiano, parsley, salt, pepper, eggs, and oregano. Using the paddle attachment, combine mixture and make sure there’s no dry spots.
  2. Add ½ of the ground beef and ground pork to the mixer bowl and beat at medium-high speed until thoroughly blended with bread mixture.
  3. Remove bowl from stand mixer and add the remaining ground beef and pork. With clean hands, mix meatball mixture until just combined. Avoid over mixing!
  4. Use a large ice cream scoop to form uniform meatballs and arrange on parchment lined baking sheet. Press one mozzarella pearl into each meatball and roll meatball in your hands to cover the cheese completely.
  5. Add olive oil to a large skillet and heat to medium-high. Sear meatballs on all sides. Do not cook them all the way through.
  6. Store meatballs in a container and refrigerate until ready to use.

For the sauce:

  1. In a large skillet, cook onion, garlic, and dried oregano until softened. Transfer to a slow cooker with the marinara sauce and basil sprig. Season with salt. Cook on low heat for 3 hours and add meatballs for last 30 minutes of cooking.
  2. Place meatballs to a serving platter, spear with toothpicks, cover with sauce, and grate Parmigiano-Reggiano over top.

You can serve these meatballs right from the slow cooker, or place them on a serving platter next to the slow cooker so your guests can help themselves!
