Escape to the islands without even leaving your home with this banana coconut rum colada! Piña coladas are practically the official drink of the summer but instead of heavy coconut cream, this recipe uses coconut water to keep it light and refreshing.

Traveling from the West coast to East coast and then back to the West coast this summer means I’ve had plenty of cocktails. But I always found myself ordering any cocktail with coconut rum. Even pictured here with a pineapple cocktail filled with a coconut cocktail in the Sedona desert in Phoenix!

Banana Coconut Rum Colada
Yield: serves 1
INGREDIENTS
- 1 oz Blue Chair Bay Banana Rum
- 1/2 oz Blue Chair Bay Coconut Rum
- 1/2 oz lime juice
- 1/2 oz honey
- 3 oz coconut water
- Chocolate bar
DIRECTIONS
- Add all ingredients to a cocktail shaker, shake to combine, and strain over ice.
- Grate chocolate flakes on top for garnish.
Garnish with a pineapple piece for that extra tropical feel and use a microplane to grate chocolate (dark, milk, white – your favorite chocolate!) on top before serving.
