Grilled Salmon Tacos with Mango Avocado Salsa

Instructions

  1. Combine mango, avocado, red onion, lime juice, and 2 tablespoons of olive oil in a bowl.
  2. Stir gently to mix, cover and refrigerate.
  3. Season salmon fillet with olive oil, garlic salt and cayenne pepper.
  4. Grill salmon until just cooked through, about 3 – 5 minutes per side.
  5. Remove from grill and cover with aluminum foil to keep warm.
  6. Wrap corn tortillas in another piece of foil and warm on grill or in the oven, about 5 – 7 minutes.
  7. To serve, place salmon and the avocado and mango salsa onto two warm tortillas.
  8. Garnish with a lime wedge and cilantro.
