Rover Concept’s “Coffee” Dining Experience

Rover Concept is a experimental ultra fine dining experience created to exist outside of any specific industry or market, with an aim to repudiate standards and perceived limitations, while also circumventing preconceived ideas on what dining should be.

We have utilized new sensory sciences such as Gastrophysics, Neuro-gastronomy, and study of the human somatosensory system to create a dining experience that has never before existed. Every detail inside of our space has been designed to be tied back to taste. Garnishes are no longer just on the plate, but in the space. Sound and lighting and temperature and textures are all a part of the composition of each course. 

In almost every culture, coffee exists as a staple drink with the consumption primarily being utilitarian. With something that is so engrained in our culture as a necessity and less of a luxury, it has developed expectations around it that are seemingly unbreakable. With this menu and experience we aim to take the two biggest expectations and simply remove them, creating something brand new that has never been experienced before.

In Rover Concepts “Coffee” experience, coffee will never appear as a liquid we know, and it may not even be brown. By creating courses revolving around unique flavor and terroir, but removing the familiarity of a cup of coffee, we can create a new moment that will allow you to experience something they’ve had their entire life, in a new way. During the service guests will experience multi sensory dining and theatricality mixed with progressive culinary techniques to create a dining experience that has never before existed.
